Grown by Jairo Arcila at Finca Villarazo, the beans are picked and transported on the same day to Confinet's processing station.
After a 24-hour dry anaerobic fermentation, the beans are kept in a cool environment followed by a frozen state before placed on raised beds to achieve the ideal moisture content at 35 degrees celsius.
